Sunbutter Cookies

Oh for the love of Peanut Butter. I really really really loved Nutter Butters. Those babies are right up there for me as far as favorite cookies are concerned. Don’t get mad sugar cookie, I love you too! But there is something about peanut butter. I think it goes back to one of my earliest memories as a kiddo in preschool. You see in my Preschool the Teachers made this play dough from Peanut Butter and it was soooo good! You could shape it into anything you wanted and when you were done, you ate it! What kid wouldn’t act like a monster devouring some yummy Peanut Butter people?  So by now you are saying what’s the Peanut Butter talk, I thought this was a Sunflower Seed Butter recipe!?! Well your right, it is. Sunflower is the healthier of the two so if you know me, you know I tend to lean towards Paleo & Keto foods, so Sunflower Butter cookies it is! So if you have all the ingredients, let’s do this thing. I promise, the Erythritol will provide all the sweetness you would expect from a jar a Jif  without all the unwanted sugar. 

Sunbutter Cookies

Cook Time: 0 minutes

Ready In: 12 minutes

Ingredients

2 large Egg, fresh, whole, raw

85 gram Quest Protein Powder - Vanilla Milkshake

16 tbsp Natural Sunbutter (made with sunflower seeds)

48 tsp Halefresh Erythritol


Instructions

Combine all ingredients is a bowl with a spoon or mixer.

Scoop a tablespoon and roll a ball with your hands. Place on cookie sheet with parchment paper and press flat with a fork.

Bake on 350 for 12 to 15 minutes

let cool.

Keep is cool place in a bag.
